"Saalwächter's 2021 Silvaner Grauer Stein opens with an intense and calcareous, citric and concentrated bouquet of lemons and crushed white rocks. It is reminiscent of Jerez and Jura wines in its saline/iodine purity and delicate, reduced oxidation. Lush and mouth-filling on the first palate, with fine tannins, enormous salinity and a salivating and grippy finish, this is an impressive, seriously structured Sylvaner that was aged on the full lees for two years in halbstücks and bottled two weeks before I tasted it at the end of November 2023. The aftertaste is pure salts and rocks and enormously refreshing citrus fruit. A great wine again! 12.5% stated alcohol. Natural cork. Tasted at the domaine in November 2023."
